It is famous in Southern Indian, Sri Lankan and Maldivian cuisines. A normal sambar method will have a mix or two or more types of vegetables along with lentils, tamarind, sambar powder and a few other masala.it is a common dish in South Indian homes and is also equally popular and loved by everyone.
The South Indian food Fans are aware that dinner would be lacking without sambar. This South Indian tasty gravy dish has a lot of vegetables and is mostly made of toor dal. Sambar is typically thought to be difficult to prepare because of its large number of components, but it is very easy dish to prepare. The dal , oil, spices, sambar masala, tamarind, and mixed vegetables make up the majority of the sambar ingredients. Sambar is a vegetable stew made with dal, pigeon peas, and tamarind broth. Southern Indian, Sri Lankan, and Maldives cuisines all use it frequently. According to the legend surrounding the creation of sambar, Sambhaji, son of Maratha ruler Chhatrapati Shivaji, is the genuine source of the dish's original recipe. According to legend, when his chief chef was gone, Shivaji's son Chhatrapati Sambhaji Raje Bhonsale, one of the Maratha kings, attempted to cook dal for himself. He cherished his own creation, known as "Sambar," and he loved it. Sambar is incomplete without sambar masala. Although there are different brands of sambar masalas available in the market, nothing beats a homemade authentic sambar masala. It is full of spices and free of adulteration.I prepare Sambar masala at home and I feel homemade sambar masala powder gives the best and perfect taste and results in sambar.You can also use your favorite brand of sambar masala powder of any other company.
INGREDIENTS FOR SAMBAR RECIPE
Oil - 1 tbsp
Onion - 2 mediom and chopped
Tomato - 2 chopped
Green Chilli - 2 slit
Brinjal - 1 small chopped finger size
Carrot - 1 chopped finger size
Beans - 5 chopped finger size
Ladysfinger - 5 chopped finger size
Drumstick - 1 long size cut into finger size
Toor Dal / Tuvaram paruppu - 1 cup cooked
Tamarind water - 1/4 cup
Sambar Powder - 3 tbsp or to taste
Salt according to taste
Jaggery / gur - 2 tsp
Coriander Leaves a small handful finely chopped
Water as according to required
For Tadka:
Oil - 2 tbsp
Mustard Seeds - 1 tsp
Urad Dal - 1 tsp
Cumin Seeds / Jeera - 1 tsp
Dry Red Chilli - 4
Asafoetida / Hing - ½ tsp
Curry Leaves 10 -15
LET'S GO MAKE SAMBAR RECIPE
Heat oil in a pan and add in chopped onion and saute, and now add chilli and chopped tomato. Saute it for 4 mins.
Add in all fingar cut vegetables and saute it for 6 to 8 mins.
Now add tamarind water in this gravy and cook 4 mins
Add in water, Cover it cook for 10 to 15 mins till the vegetables is cooked.
Now add in cooked dal, sambar masala powder, salt and jaggery and mix well. Simmer this whole thing for 15 mins.
Now make tadka by heating oil in a tadka pan and crackling all whole spices. Fry this for a min.
Pour this over the sambar and mix very well, and covered with lead.
Add in coriander leaves and mix. Leave the pan covered till serving.
Serve.
